Clean the artichokes, remove most of the stalk, leaving a 5-6cm stem, rinse them, dry them up and beat them so to slightly open them up. Add salt, chopped parsley and garlic, pepper and a bit of oil. Put the stalk in burning embers, add oil and turn the artichokes from time to time. Once cooked, remove the burned part with a knife and serve.
